To give you a little taste of Thailand while you’re away from the Land of Smiles, we asked an expert Thai mixologist to help. Khun Deal has previously worked at Pimalai Resort & Spa and is currently showcasing his skills at the rooftop bar of the Leisure Hostel in Krabi Town. Khun Deal has put together some Thai-themed cocktails you can try at home.


Siam Sunrays cocktail

Siam Sunrays ingredients
- 60ml Smirnoff vodka
- 25ml coconut liqueur
- 15ml syrup
- 3 slices of young ginger
- 3 slivers of lemongrass
- 3 drops of lime juice
- 1 small Thai chilli
- 1 kaffir lime leaf
- Soda water
Method
- To extract the aroma and flavour of the Thai herbs, crush the chilli, ginger, kaffir lime leaf and lemongrass together in a shaker
- Add syrup, lime juice and Smirnoff vodka and shake well
- Strain into a glass with ice and top up with soda water
- Garnish with chilli, lemongrass and a slice of lime
Sabai Sabai cocktail

Sabai Sabai ingredients
- 45 ml of Mekhong Thai spirit
- 45 ml of freshly squeezed lemon juice
- 15 ml of simple sugar syrup
- A pinch of sweet Thai basil (chopped roughly)
- Club soda
Method
- Take a mixing glass and pour in the Mekhong Thai spirit
- Add all of the other ingredients except for the club soda.
- Then add some ice cubes and shake vigorously for 7 or 8 seconds to blend the mixture
- Use a cocktail strainer to pour the drink into a chilled cocktail glass or long glass
- Top up with a splash of club soda
- Garnish with a sprig of Thai basil
The Mist cocktail

Ingredients
- 45 ml of Chivas regal
- 30 ml of freshly squeezed lemon juice
- 30 ml of Merlot red wine
- 15 ml of peach schnapps
- 10 ml of Monin elderflower syrup
- 10 ml of tamarind juice
- 3 slivers lemongrass
- 1 teaspoon of white sugar
- 1 teaspoon of salt
- 1 teaspoon of Thai chilli flakes
Method
- Rim a chilled glass with sugar, salt, and chilli flakes
- Crush lemongrass in a shaker
- Add all of the ingredients to the shaker except for the Merlot red wine
- Dry shake first
- Then add ice cubes to the shaker and shake well
- Pour and strain in glass and slowly layer with the Merlot red wine on top
