What do you get when you combine UK comfort food with Thai comfort food? You get Thailand’s most famous stir-fry in a meat pie! This novel twist on a pad kaprao recipe is brought to you by talented British chef, Josh Green (aka ‘The Ginger Farang’).

After years of working as a chef in Michelin-starred restaurants, Josh followed his heart and dreams and started a new life in Thailand with his wife and daughter. He has built up a sizeable following on TikTok while showcasing his cooking skills and love for Thai food. We’ll be showing more recipes from Josh in the coming months, but in the meantime, we hope you enjoy this tasty East-meets-West kaprao fusion dish.
Ingredients
Makes 6 pies
- 500g pork mince
- 5 cloves of garlic
- 6 dried red chillies
- 35g oyster sauce
- 2g MSG
- 1 teaspoon of sugar
- 2 tablespoons fish sauce
- 1 bunch of holy basil (kaprao)
- 6 chicken eggs
For the pie crust
- 12 frozen paratha breads
For the egg wash
- 1 egg yolk
- 15g water
- pinch of salt
Ingredient notes
- Try to find holy basil (not Thai basil) for the most authentic taste. If you can’t find it listed under holy basil, try searching in the UK and Ireland for ‘tulsi’ (the name for holy basil in India).
- Look for paratha in the freezer aisle of your local supermarket. Josh recommends the Taj brand.
- For oyster sauce, the Maekrua brand is good. And for fish sauce, look for the Tiparos brand. If you can’t find these sauces in your nearest supermarket, they can be bought online in the UK and Ireland from several Asian food suppliers, including Thai Food Online and Joy Thai Spices.
Method
- Smash chillis and garlic using a mortar and pestle
- Heat oil in the pan
- Add chillies and garlic to the pan
- Add pork and stir-fry gently (take care not to caramelise the meat)
- Toss the mix
- Add sauces and seasonings
- Add holy basil (kaprao)
- Once finished, set aside and place in the fridge
Pie mould
- Make the egg wash
- Line a pie mould with frozen paratha bread
- Use a fork to pierce holes in the base of the paratha bread
- Fill up to the brim with kaprao pie mixture
- Brush the brim with egg wash
- Top the pie with another paratha bread
- Use a knife to cut a couple of small air holes
- Crimp all around the edge using the back of a fork
- Use a small, sharp utility knife to cut (at an angle) the excess pie crust
- Brush the top of the pie with egg wash
Baking times and temperatures
- Preheat your oven to 200°C
- Bake for approximately 18 minutes or until the pastry is golden, crispy and cooked through
- Top the pie with a fried egg
- Enjoy!
